Výroba piv s ovocnou příchutí a jejich senzorické hodnocení

The theoretical part is focused on the description of the raw materials that are necessary for the production of beer with a fruit component. The beer production technology is outlined. Breweries and microbreweries that offer fruit beer in their portfolio are also mapped in the literature research. The practical part was focused on the production of fruit beer, when a beer containing basic ingredients (malt, hops, yeast, water) was produced and a fruit compo-nent in the form of puree (passion fruit, mango) was subsequently added to it. The beer was subsequently subjected to analytical and sensorial evaluation. For all samples, the volume and weight alcohol content, real and apparent extract and original wort extract were deter-mined using the FermentoFlasher device. As part of the sensory analysis, when appearance, drinkability, aroma and taste were evaluated, samples flavored with passion fruit achieved the best results.
Signifying micro breweries: Semantic analysis of advertising strategies within the context of beer culture in South Bohemia

Annotation The thesis deals with the phenomenon of microbreweries and semantic analysis of their advertising strategies with a focus on the region of South Bohemia. In the first part it analyses the history, definition, communication model, media and theoretical knowledge regarding advertising psychology in order to comprehensively cover the topic of advertising. It will then introduce microbreweries in the context of small companies, the current situation in the Czech brewing industry and compare their possibilities, advantages and disadvantages as well as marketing strategy with large breweries. It will also present the history of Czech brewing, the concept of beer culture, the environment of pubs and their role in the development of Czech society. Finally, the thesis will focus on the analysis of the presentation of microbreweries in the South Bohemian region. It will focus on the production of beer and its typical and unusual types within the Czech Republic, introduce the types of beer packaging and the importance of beer glassware, analyse the function of visual identity and the impact of small breweries in the internet environment, and introduce current cultural events and tourism within the brewing industry. It will demonstrate all this on concrete examples of South Bohemian microbreweries.

This bachelor thesis deals with an analysis of the marketing mix of Minibrewery U Stočesů. The work is divided into two parts - the theoretical and the practical part. In the theoretical part are knowledge from literary sources about brewing and basic information about the minibrewing industry are processed. It also describes the individually components of the 4P marketing mix and other possible marketing mix concepts. The practical part describes the introduction and characteristics of minibrewery U Stočesů and the analysis of its marketing mix. The aim of the work is to evaluate the individual components of the 4P marketing mix, compare with other minibreweries and propose changes for the future that would lead to improvements.
SWOT analýza vybraného minipivovaru

The bachelor thesis deals with the SWOT analysis of the Minibrewery of the Faculty of Agriculture and Technology of the University of South Bohemia in České Budějovice. The thesis is divided into two parts - theoretical and practical part. The theoretical part describes the basic information about the brewing industry with regard to minibreweries and individual analytical methods in management which are STEP (PESTLE) analysis, BCG matrix, Porter's model of five forces and SWOT analysis. In the practical part there is an evaluation of the SWOT analysis of the selected minibrewery which will be used to evaluate the current state of the minibrewery. The aim of the bachelor thesis is to evaluate the situation of the minibrewery using SWOT analysis and to propose measures and changes that would lead to the improvement of the company.
Změny v odvětví pivovarnictví a jejich ekonomické dopady na malé české pivovary

The thesis is focused on the brewing industry in the Czech Republic and changes within it which influenced the development of small Czech breweries. An analysis of the industry is performed using the Porter's Five Forces model focusing on the five competitive forces represented by the threat of new entrants, the bargaining power of suppliers, the bargaining power of customers, substitute products or services, and established rivals. Market concentration is also analyzed given the changes in the brewing industry. Changes in consumer demand and their influence on the brewing industry are examined subsequently. In particular, the change of consumer preferences leading to an increased consumption of stronger beers or aspects of beer selection are analyzed. Based on the findings, the impacts of these changes on small Czech breweries are described. In the next part of the thesis, economic results of selected breweries are compared using the indicators of value added margins, return on assets, return on equity and return on sales.
Corporate social responsibility of microbreweries

Podškubková L. Corporate Social Responsibility of Microbreweries. Bachelor the-sis. Brno: Mendel University, 2018. The bachelor thesis is focused on corporate social responsibility regarding mi-crobreweries. The main goal of the bachelor thesis was to propose recommenda-tions to a chosen Czech microbrewery based on a desk and qualitative research, and comparison with a chosen Irish microbrewery. Concerned literature of corpo-rate social responsibility and microbreweries was studied and used as a base for the practical part. Original CSR analysis structured by the ISO 26000 norm was used for the internal environment of a chosen Czech microbrewery and a chosen Irish microbrewery. The two microbreweries were later compared for a better un-derstanding of the problematic. It was discovered that the chosen microbreweries have similar CSR activities but the Czech microbrewery practices them in a better way. For the external environment PESTE analysis was used for the Czech brewery industry and it’s opportunities and threats were found. Alongside, similar compa-nies with a great CSR review and actions were examined. Based on all these factors it was discovered that the Czech brewery doesn’t provide information of irrespon-sible consummation of beer, doesn’t provide nutritional values and prices of their beers on their website, doesn’t use LED fluorescent lamps and therefore saving energy and also that their employees have only a few benefits. Recommendations for these problems were suggested and economically interpreted.

This diploma thesis deals with evaluation of quality parameters of beer from microbreweries and their sensory analysis, as well as comparison with several beers from industrial breweries. The theoretical part describes beer production, used raw materials and their specification. Also mentioned is the technology needed. In the practical part, three bits of beer were brewed in the school brewery, which were further used to analyze both analytical and sensory. When analyzing the original extract of wort and alcohol, some brewers were found to be inadequate and had significant deviations from the declared data on the labels. One sample even breached Decree No. 355/1997 Coll., Where it exceeded the stated amount of alcohol by more than 0.5%. In sensory analysis, the most important descriptor was the steer and fullness that most reflected in the overall assessment.
Analysis of media communication of selected microbreweries

A thesis on analysis media communication of selected microbreweries explores the relationship between small brewing companies and media. The work focuses on selected small businesses, offering to consume their own beer on-site production, ie., breweries whose part is the restaurant operation. The thesis depicts the first principles of marketing and media communications and a brief history of beer brewing in the Czech Republic. It also discusses the particular selected Prague microbreweries and evaluates elements of their presentation and promotion in traditional and new media. Chapters are dedicated to quantitative and qualitative research, which familiarize readers with theoretical knowledge of these surveys, the design of the questionnaire survey and its results. Similarly, also provide information regarding the implementation and results stemming from interviews with representatives of selected microbreweries within qualitative research. In conclusion, based on the acquired knowledge and research, a set of recommendations are provided for the improvement of marketing communication media for each of the microbreweries.
Competitiveness of small and medium enterprises in selected sector

This thesis evaluates the current status of the small and medium-sized enterprises in the brewing industry in terms of competitiveness and their market position. It reviews the effectiveness and possibilities for further development of two companies in the Pilsen region which belong to the category of small and medium-sized enterprises - the restaurant breweries: Lukrecius a.s. and Akciový pivovar Letiny a.s. Small and meidum-sized enterprises have lower economic strength compared to large businesses. Another problem that affects almost all enterprises in The Czech Republic since the middle of the year 2016 is the shortage of staff. Even the restaurant breweries are affected by these problems. Small breweries have been developing fast since 2013. About 50 new small breweries are founded every year. To become competitive, the breweries must have a certain competitive advantage so they need to know their strengths and weaknesses and above all, they must know the business environment in their area. The companies are usually very closesly connected with the region where they operate.

The aim of this bachelor's thesis is to describe the process of making the malt, its division and beer brewing in the Czech republic. The description of most widely used raw materials and their potential usage follows. The part of this project is dedicated to main aspects of the high public interest in small breweries and its products. A research amongst small breweries located near Brno showed, that the main reason for this interest is the diversity of beer produced there. The brewers in smaller breweries can afford experimenting with their beer a lot more, which leads to the wider variety of products offered and proportionally to the higher chances of attracting more customers. The more diverse the offer is, the more customers can find the type of beer they like here. Because of this, the small breweries have their foot-hold in brewing industry, though unable to compete with bigger breweries in the quantity and beer price.
